The chefs at Fit Farm have done it again with this awesome new recipe that puts a twist on meatloaf, New Orleans style!
Yields: 2 1/2 Yellow Plate* Servings

*Yellow Plate: 1 yellow plate equals 1500 calorie meal plan according to the Fit Farm at Rock Springs nutrition program. Dinner represents 400 calories of the daily plan.
Ingredients
Meatloaf:
New Orleans Style Shrimp Sauce:
- 1 cup of Ground Turkey or Ground Turkey/Beef mix
- 3/4 cup Egg Whites
- 3/4 cup Breadcrumbs
- 1/4 cup Onion, finely diced
- 1/4 cup Green Peppers, finely diced
- 1/4 cup Celery, finely diced
- 2 tbs Cajun/Creole Seasoning
New Orleans Style Shrimp Sauce:
- Shrimp or Crab
- 1/2 cup Almond Milk
- 1/2 cup Chicken Stock
- Cornstarch (as needed)
- Parmesan Cheese
- Olive Oil
- To taste
- Salt
- Pepper
- Garlic
- Creole Seasoning
- Cajun Seasoning
Directions
Meatloaf:
Shrimp Sauce:
- Preheat oven to 350°F.
- Combine meatloaf ingredients and shape into a loaf.
- Bake for 25-30 minutes or until internal temperature is 160°F.
- Remove and let rest for 10 minutes.
- Top with shrimp sauce and serve.
Shrimp Sauce:
- While meatloaf is cooking, combine shrimp sauce ingredients in a mixing bowl and thicken with cornstarch (as needed) into a slurry that coats the back of a spoon.
- On medium heat, cook for 10 minutes.
- Sprinkle in parmesan cheese and add a splash of olive oil.
- Add shrimp or crab, and leave in sauce until fully cooked, stirring regularly.
