Ingredients

  • The Crust
    • 3 cups of Graham Cracker Crumbs
      • Gluten-free option: Use gluten-free graham crackers or make finely ground crumbs from gluten-free cereal or granola
    • 2 tbsp Coconut Oil
    • 1 tbsp Water
  • The Cheesecake Filling
    • 2 (8oz package) of Neufatchel - Less Fat Cream Cheese, room temperature
    • ¾ cup of Plain Non-fat Greek Yogurt, room temperature
    • ¼ cup Low-fat Lite Sour Cream
    • cup Agave Syrup or Sugar-free Maple Syrup
    • 2 Eggs
    • 2 Egg Yolks
    • 2 tsp Vanilla Extract
    • 2 tbs Tapioca Starch or Cornstarch
    • ¼ cup Vanilla Whey Protein Powder
  • Toppings (optional)
    • Fresh Lemon Zest
    • Fresh Pineapple, crushed
    • Fresh Berry

Directions

Healthy Cheesecake Recipe Step 1

1. Preheat oven to 350° F and line a muffin tin with 12 cupcake liners.

2. Put graham cracker crumbs in a bowl. Wet and mix with coconut oil + water as needed to make a slightly wet, sand-like mixture just enough to moisten the crumbs.

3. Spray paper cupcake liners with cooking spray. Divide crumbs evenly amongst muffin liners (about 1 ½ tbs each). Then, use a spoon or your fingers to flatten and pack the crumbs.

4. Put all of the cheesecake filling ingredients in a large food processor, and on the lowest setting, mix until smooth for 30 - 60 seconds. Do not overmix.

5. Scoop mixture out of food processor with a 2 oz ladle, divide, and fill each muffin cup evenly. Bake 17-20 minutes or until the filling has just set - it should not be jiggly or look wet.

6. Let cool for 30 minutes at room temperature before moving to the refrigerator. Chill in the refrigerator at least 3 hours before serving.
